The other day when I went on a business trip, I bought an ekiben (bento sold on trains and train stations) at Okayama station.

I opened the lid and it looked like this.

Not even a hinomaru-bento (bento with just a red pickled plum in the center of rice), very frugal.

But if you turn it upside down and open the lid on that side, an amazing chirashi-zushi (sushi rice with seafood toppings) appears!

This bento is actually called “kakushi-zushi (concealed sushi).”
It was invented when laws regulating expenditures were made in the region which is quite interesting.

If you ever have the chance of buying an ekiben at Okayama station, please try the kakushi-zushi. It tasted good, as well.
